Quick and easy pasta recipe with vegetables and side dishes – delicious and economical!

From our childhood, my daughter Angélica and I have always had many sueños and I have constantly busied myself with ways of realizing them. Between these sueños, one of our most important places and pasties was in the kitchen. Our encantaba pasar tiempo juntas, experimenting with ingredients and creating new dishes.

We do not have any familiar recipes or typical family dishes, but we only create them in a single-parent family. To create, we leave out our tastes and aversions in the kitchen. A long time ago, our hemos dedicated to discovering and creating new recipes that adapt to our tastes. If even Angélica is my favorite, it is a good sazoned pasta. It is accompanied by meat, pollo or camarones, but we always find the way to make it delicious.

From our childhood, we learned to prepare our meals with the ingredients that we had to hand, we took out a recipe that was not solo sabrosa, but it was also adaptable and economical. We want to share this current recipe, perfect for any occasion.

Ingredients:

For the pasta:

  • 250 grams of pasta of your choice
  • 1 tablespoon of salt

For the sofrito:

  • 1 onion, finely chopped
  • 2 dientes of ajo, finally picados
  • 1 small trozo of ginger, finely picado
  • 2 pieces of cebollín, finely picados
  • 1 ram of apio, finally picada

For the vegetable mix:

  • 1 tomato, cut into cubes
  • 1 pepino, pelado and cortado in cubes
  • 1 aguacate, cut into cubes
  • A manojo of cilantro fresco, picado
  • The juice of medium lemon

Optional accompaniments:

  • Cooked and thinned chicken
  • Cooked soft meat
  • Cooked shrimps

Instructions:

Cooking the pasta:

  1. Llena una olla grande con agua y añade una cucharada de sal.
  2. Bring the water to a boil and add the pasta. Cook for 10 to 12 minutes until the pasta is al dente.
  3. Keep the pasta safe and warm with hot water. Reserve and chill already.

Preparation of the sofrito:

  1. Calienta a little bit of oil in a large pan with medium heat.
  2. Añade la cebolla, el ajo, el jengibre, los cebollines et el apio. Leave for approximately 1 minute and mediocre, preventing the heat from intensifying too much.

Mixture of vegetables:

  1. In a large pot, combine the tomato, the pepino, the aguacate and the cilantro.
  2. Express the juice of mediolimón sobre las verduras y mezcla bien.

Pasta assembly:

  1. In the bowl with the greens, add the chilled pasta and the sofrito.
  2. Incorporate the accompaniment of your election (pollo, meat or camarones), ensuring that it is well cooked and desmenuzado.
  3. Mix all the ingredients until they are completely integrated.

Presentation:

  1. Serve the pasta in individual dishes, decorated with a little cilantro fresco if desired.
  2. Enjoy your delicious and quick food!
